Description

These homemade Cheez-Its are a crunchy, cheesy snack made with real cheddar cheese, perfect for satisfying snack cravings in about 30 minutes.

For the Crackers

  • 2 cups sharp cheddar cheese, freshly grated (Opt for a block of cheddar for best flavor.)
  • 1 cup all-purpose flour (Can substitute with half whole wheat for a healthier version.)
  • 1/2 cup butter, cold and cubed (Salted butter can be used, but adjust salt accordingly.)
  • 1/2 teaspoon salt (Adjust based on cheese and personal preference.)
  • 4-5 tablespoons ice water (Add gradually to achieve the right dough consistency.)

Instructions

Preparation

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Grate 2 cups packed of sharp cheddar cheese and set aside.
  3. In a food processor, pulse together the flour, salt, and cold butter until the mixture is crumbly.
  4. Add the grated cheese and pulse a few times until it resembles coarse sand.
  5. Drizzle in ice water, 1 tablespoon at a time, pulsing until the dough begins to clump together.
  6. Gather the dough into a ball, then split it in half for easier rolling.

Rolling and Cutting

  1. Roll the dough between two sheets of parchment to about 1/8 inch thick.
  2. Cut into 1 inch squares, and if desired, use a fluted pastry wheel for zigzag edges.
  3. Dock each square by poking a hole in the center with a skewer or fork.

Baking

  1. Bake in the preheated oven for 12 to 16 minutes, or until the edges are golden brown.
  2. Remove from oven and let cool on the pan for 5 minutes before transferring to a rack to cool completely.

Notes

Store in an airtight container at room temperature for 4 to 5 days. To re-crisp, bake at 300°F for 5 to 7 minutes. Variations include adding smoked paprika, garlic powder, or cayenne for extra flavor.
