Ingredients

Units Scale

For the Zucchini Tots

  • 2 medium Zucchini, shredded (Shred zucchini and drain well.)
  • 1 cup Cheddar cheese, sharp (Use sharp for more flavor.)
  • 1 large Egg (For binding.)
  • 1 cup Breadcrumbs (Use regular or panko.)
  • 1/4 cup Grated Parmesan (Optional for added flavor.)
  • 1 teaspoon Garlic powder (Can also use minced garlic.)
  • 1/2 teaspoon Onion powder (Optional.)
  • 1 teaspoon Salt (Adjust due to cheese saltiness.)
  • 1/2 teaspoon Black pepper
  • cooking spray Cooking spray or oil (For greasing the baking sheet.)

Instructions

Preparation

  1. Preheat your oven to 400°F and lightly grease a baking sheet or line it with parchment paper.
  2. In a bowl, mix the drained shredded zucchini, cheddar cheese, egg, breadcrumbs, garlic powder, onion powder, salt, black pepper, and grated Parmesan (if using).
  3. Stir until it looks like a thick, scoopable mixture. If it’s too wet to shape, add 1 to 2 tablespoons more breadcrumbs.
  4. Shape the mixture into small logs, aiming for about 1 tablespoon each, and pack them gently but firmly.
  5. Place the tots on the baking sheet with a little space between them and spray the tops lightly with cooking spray.

Baking

  1. Bake for about 20 to 25 minutes, flipping halfway, until golden and crisp around the edges.

Notes

These tots can be customized with herbs or spices according to your taste. Serve with various dipping sauces like ranch, marinara, or garlic aioli.
