Description

A fresh and comforting zucchini pasta dish that comes together quickly, perfect for a weeknight meal.


Ingredients

For the Pasta Sauce

  • 2 medium medium zucchini, grated or finely chopped (Choose firm zucchini, wash well and keep the skin on.)
  • 3-5 cloves fresh garlic, minced (Adjust garlic to your taste; more for bold flavor.)
  • 3 tablespoons olive oil (Or use half butter, half oil for a richer flavor.)
  • 1 teaspoon salt (Plus more for pasta water.)
  • to taste Black pepper (Use to season.)
  • a pinch red pepper flakes (Optional for heat.)
  • 1 cup grated Parmesan (Plus extra for serving.)
  • 1/2 cup pasta water (Save from cooking pasta.)
  • to taste Squeeze of lemon (Optional for brightness.)
  • a handful basil or parsley (Optional for garnish.)

Instructions

Preparation

  1. Warm olive oil in a large skillet over medium heat.
  2. Add minced garlic and stir for about 30 seconds to 1 minute until fragrant but not browned.
  3. Add grated zucchini and salt, cooking for 8 to 12 minutes until softened.
  4. Stir occasionally and introduce black pepper and optional red pepper flakes.

Cooking the Pasta

  1. Bring a pot of salted water to a boil and cook pasta according to package instructions until tender.
  2. Reserve at least 1 cup of pasta water before draining.

Combining

  1. Add hot drained pasta directly into the skillet with zucchini sauce.
  2. Toss the pasta so the zucchini coats the noodles.
  3. Add 1/3 cup of reserved pasta water and toss again until glossy.
  4. Sprinkle in Parmesan gradually while tossing to help it melt.
  5. Add more pasta water a splash at a time until desired sauce consistency is achieved.
  6. Adjust seasoning with more salt, pepper, or lemon juice as preferred.

Notes

Serve immediately with extra Parmesan on top. Store leftovers in an airtight container for up to 3 days. Reheat gently, adding a splash of water to loosen the sauce.
