Ingredients
Scale
For the Zucchini Bites
- 2 medium Zucchini, shredded (Medium zucchini work best)
- 1 teaspoon Salt (For drawing out water)
- 2 large Eggs (Helps bind everything)
- 3 cloves Garlic, minced (Or finely grated)
- 1/2 cup Grated Parmesan (For salty cheesy flavor)
- 1/2 cup Shredded mozzarella (For melt and stretch)
- 1/2 cup Bread crumbs (Regular or panko for extra crunch)
- 1 teaspoon Italian seasoning (Or dried herbs)
- 1/2 teaspoon Black pepper
- 1 pinch Chili flakes (Optional)
Instructions
Preparation
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Shred zucchini using a box grater and toss with salt. Let it sit for 10 to 15 minutes.
- Scoop the zucchini into a towel and squeeze out as much liquid as possible.
Mixing
- In a bowl, mix drained zucchini, eggs, garlic, Parmesan, mozzarella, bread crumbs, Italian seasoning, and black pepper.
- Let the mixture sit for 3 to 5 minutes to allow the crumbs to soak up a bit.
Baking
- Scoop the mixture into small mounds, about 1 tablespoon each, and lightly press down.
- Bake for 18 to 24 minutes until deeply golden, flipping at around 12 minutes for even browning.
Notes
Let the bites rest for a couple of minutes after baking to firm up. For maximum crispiness, consider air frying at 380°F for 10 to 14 minutes.
