  • 1/2 teaspoon Black pepper
  • 1 pinch Chili flakes (Optional)


Instructions

Preparation

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Shred zucchini using a box grater and toss with salt. Let it sit for 10 to 15 minutes.
  3. Scoop the zucchini into a towel and squeeze out as much liquid as possible.

Mixing

  1. In a bowl, mix drained zucchini, eggs, garlic, Parmesan, mozzarella, bread crumbs, Italian seasoning, and black pepper.
  2. Let the mixture sit for 3 to 5 minutes to allow the crumbs to soak up a bit.

Baking

  1. Scoop the mixture into small mounds, about 1 tablespoon each, and lightly press down.
  2. Bake for 18 to 24 minutes until deeply golden, flipping at around 12 minutes for even browning.

Notes

Let the bites rest for a couple of minutes after baking to firm up. For maximum crispiness, consider air frying at 380°F for 10 to 14 minutes.
