- 1 clove Garlic (Fresh or powder)
- 1/2 tsp Black pepper (Adjust to taste)
- 1/2 tsp Baking powder (For lightness)
- 2 tbsp Oil (For frying; can use avocado or olive oil)

Preparation
- Grate the zucchini and toss it with salt. Let it sit for 10-15 minutes to drain.
- Squeeze out as much water as possible from the zucchini using your hands or cheesecloth.
Making the Fritters
- In a bowl, add the drained zucchini, eggs, garlic, black pepper, and parmesan (if using). Mix well.
- Sprinkle in the flour and baking powder. Stir until you have a thick, scoopable mixture.
- Heat a skillet over medium to medium-high heat, adding enough oil to coat the bottom.
- Scoop the batter into the skillet and flatten it slightly. Avoid making them thick.
- Cook for 3-4 minutes per side until deep golden brown. Transfer to a plate lined with paper towels or a wire rack.
Notes
To keep fritters from getting soggy, drain well, use enough heat, and don’t crowd the pan. Serve with dipping sauces like garlic yogurt or spicy mayo for added flavor.
