- 2 medium zucchini (about 3 to 4 cups shredded)
- 1 large egg
- 1 to 1 1/2 cups shredded mozzarella (plus a little extra for topping)
- 1/3 cup grated Parmesan
- 1/2 cup breadcrumbs or almond flour
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning (optional)
- Black pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Mix drained zucchini, egg, mozzarella, Parmesan, breadcrumbs (or almond flour), and seasonings in a bowl. Stir until it looks like a thick cheesy mixture.
- Shape the mixture on the parchment into a rectangle about 1/2 inch thick.
- Bake for 18 to 22 minutes, until the top looks set and lightly browned.
- Add optional topping: Sprinkle a little extra mozzarella on top and bake for 3 to 5 more minutes until melted.
- Slice into breadstick shapes with a pizza cutter after cooling for a few minutes.
Notes
Ensure to drain the zucchini well before mixing to avoid soggy breadsticks. These can be frozen for up to 2 months.
