Description

These cheesy zucchini breadsticks are a wholesome and tasty snack that kids will love, making it a perfect solution for afternoon cravings.


Ingredients

  • 2 medium zucchini (about 3 to 4 cups shredded)
  • 1 large egg
  • 1 to 1 1/2 cups shredded mozzarella (plus a little extra for topping)
  • 1/3 cup grated Parmesan
  • 1/2 cup breadcrumbs or almond flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning (optional)
  • Black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Mix drained zucchini, egg, mozzarella, Parmesan, breadcrumbs (or almond flour), and seasonings in a bowl. Stir until it looks like a thick cheesy mixture.
  3. Shape the mixture on the parchment into a rectangle about 1/2 inch thick.
  4. Bake for 18 to 22 minutes, until the top looks set and lightly browned.
  5. Add optional topping: Sprinkle a little extra mozzarella on top and bake for 3 to 5 more minutes until melted.
  6. Slice into breadstick shapes with a pizza cutter after cooling for a few minutes.

Notes

Ensure to drain the zucchini well before mixing to avoid soggy breadsticks. These can be frozen for up to 2 months.
