Ingredients
For the Zucchini Bars
- 2 cups shredded zucchini (Lightly packed)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon (Add a pinch of nutmeg if desired)
- 2 large eggs
- 1 cup sugar (White or half brown for a warmer flavor)
- 1/2 cup neutral oil (Vegetable, canola, or melted coconut oil)
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (Optional)
- 1/2 cup mini chocolate chips (Optional)
- 1/2 cup raisins (Optional)
For the Cream Cheese Frosting
- 8 oz cream cheese (Softened)
- 1/2 cup butter (Softened)
- 2 cups powdered sugar (Add more for a thicker frosting)
- 1 teaspoon vanilla extract

Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together eggs, sugar, oil, and vanilla until smooth and glossy.
- Combine the dry ingredients with the wet ingredients until just mixed—do not overmix.
- Gently fold in shredded zucchini and any optional add-ins (walnuts, chocolate chips, raisins).
- Spread the batter evenly in the prepared pan and bake for 25-35 minutes, until a toothpick comes out with moist crumbs.
- Allow bars to cool completely before frosting.
Frosting
- Beat together cream cheese and butter until smooth.
- Add vanilla and salt, then gradually mix in powdered sugar until creamy.
- Spread frosting over cooled zucchini bars generously.
Notes
Store frosted bars in the fridge for up to 4-5 days. You can also freeze the unfrosted bars for 2-3 months. Thaw overnight in the fridge or at room temperature for an hour.
