Description

These soft, moist zucchini bars topped with tangy cream cheese frosting are a perfect way to enjoy zucchini in a sweet treat.


Ingredients

For the Zucchini Bars

  • 2 cups shredded zucchini (Lightly packed)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (Add a pinch of nutmeg if desired)
  • 2 large eggs
  • 1 cup sugar (White or half brown for a warmer flavor)
  • 1/2 cup neutral oil (Vegetable, canola, or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (Optional)
  • 1/2 cup mini chocolate chips (Optional)
  • 1/2 cup raisins (Optional)

For the Cream Cheese Frosting

  • 8 oz cream cheese (Softened)
  • 1/2 cup butter (Softened)
  • 2 cups powdered sugar (Add more for a thicker frosting)
  • 1 teaspoon vanilla extract
  • pinch salt


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together eggs, sugar, oil, and vanilla until smooth and glossy.
  4. Combine the dry ingredients with the wet ingredients until just mixed—do not overmix.
  5. Gently fold in shredded zucchini and any optional add-ins (walnuts, chocolate chips, raisins).
  6. Spread the batter evenly in the prepared pan and bake for 25-35 minutes, until a toothpick comes out with moist crumbs.
  7. Allow bars to cool completely before frosting.

Frosting

  1. Beat together cream cheese and butter until smooth.
  2. Add vanilla and salt, then gradually mix in powdered sugar until creamy.
  3. Spread frosting over cooled zucchini bars generously.

Notes

Store frosted bars in the fridge for up to 4-5 days. You can also freeze the unfrosted bars for 2-3 months. Thaw overnight in the fridge or at room temperature for an hour.
