Ingredients
  

  • 4 medium potatoes Yukon Gold or red, diced
  • 4 large eggs
  • 1 cup sharp cheddar cheese shredded
  • ½ cup whole milk or heavy cream
  • 2 tablespoons fresh chives finely chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • Optional: ¼ cup cooked bacon or ham ¼ cup sautéed onions or bell peppers, ½ cup spinach, ¼ teaspoon garlic powder

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a muffin tin or baking dish.
  • Cook potatoes: Lightly sauté diced potatoes in a pan for 5-7 minutes until slightly tender. Season with salt, pepper, and smoked paprika.
  • Whisk eggs & milk: In a mixing bowl, whisk eggs, milk, and garlic powder until smooth.
  • Mix ingredients: Stir in shredded cheddar cheese, chopped chives, and sautéed potatoes. Add any optional mix-ins.
  • Assemble: Pour the mixture into the greased muffin tin, filling each cup evenly. Sprinkle extra cheese on top.
  • Bake: Place in the oven and bake for 20-25 minutes until golden brown and fully set.
  • Cool & serve: Let the bakes cool for 5 minutes before serving. Garnish with extra chives and enjoy!
