- 1 lb lean ground beef
- 2 medium sweet potatoes peeled and diced
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 red bell pepper diced
- 1 cup Brussels sprouts halved (optional)
- ½ cup beef broth
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp paprika
- Salt and pepper to taste
- Fresh parsley or cilantro chopped for garnish
Heat the skillet – Place a large skillet over medium-high heat and add olive oil.
Brown the ground beef – Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, then drain any excess fat.
Add aromatics – Stir in chopped onions and minced garlic, cooking until fragrant.
Incorporate vegetables – Add diced sweet potatoes, bell peppers, and Brussels sprouts. Stir well.
Season and cook – Sprinkle chili powder, cumin, paprika, salt, and pepper. Pour in beef broth, cover, and let simmer for 10-15 minutes until sweet potatoes are tender.
Finish and serve – Taste, adjust seasoning if needed, and garnish with fresh herbs. Serve hot.
