- 4 boneless chicken breasts or thighs/drumsticks
- 4 medium Yukon Gold potatoes or red potatoes/sweet potatoes, diced
- 3 tablespoons olive oil
- 4 garlic cloves minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon paprika
- 1 teaspoon salt adjust to taste
- ½ teaspoon black pepper
- 1 teaspoon fresh rosemary chopped (or dried)
- 1 teaspoon fresh thyme chopped (or dried)
- Optional: Fresh parsley chopped (for garnish)
Preheat the Oven: Set your oven to 400°F (200°C).
Prepare the Chicken: Pat the chicken dry. Drizzle with olive oil, then rub with garlic, lemon juice, paprika, salt, pepper, rosemary, and thyme.
Prep the Potatoes: Dice the potatoes evenly. Toss with olive oil, minced garlic, paprika, salt, and pepper.
Arrange on a Baking Sheet: Place the chicken and potatoes in a single layer on a baking sheet or in a large baking dish.
Bake: Roast in the preheated oven for 35-45 minutes, flipping the potatoes halfway through, until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and crispy.
Garnish and Serve: Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired. Enjoy!
