- 2 cups cooked jasmine rice preferably day-old, cold
- 1 lb boneless skinless chicken breast (diced)
- 2 tbsp garlic butter Benihana-style or homemade
- 2 large eggs beaten
- ½ cup chopped onion
- ½ cup chopped green onions
- ½ cup mixed vegetables like peas and carrots
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Optional: sesame oil or hibachi seasoning for extra flavor
Prepare Ingredients: Make sure the rice is cold and the vegetables and chicken are chopped and ready.
Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until no longer pink. Set aside.
Scramble Eggs: In the same pan, pour in beaten eggs. Scramble and cook until set. Set aside with the chicken.
Sauté Vegetables: Add garlic butter to the pan. Sauté onions and mixed vegetables until soft.
Add Rice: Stir in cold rice and break apart any clumps. Mix well with the veggies.
Combine Everything: Add cooked chicken and scrambled eggs back into the pan. Mix thoroughly.
Season: Pour in soy sauce, season with salt, pepper, and a drizzle of sesame oil if desired. Stir-fry for another 2-3 minutes.
Finish & Serve: Garnish with green onions and serve hot.
