Benihana's Famous Chicken Fried Rice

Ingredients
  

  • 2 cups cooked jasmine rice preferably day-old, cold
  • 1 lb boneless skinless chicken breast (diced)
  • 2 tbsp garlic butter Benihana-style or homemade
  • 2 large eggs beaten
  • ½ cup chopped onion
  • ½ cup chopped green onions
  • ½ cup mixed vegetables like peas and carrots
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Optional: sesame oil or hibachi seasoning for extra flavor

Instructions
 

  • Prepare Ingredients: Make sure the rice is cold and the vegetables and chicken are chopped and ready.
  • Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until no longer pink. Set aside.
  • Scramble Eggs: In the same pan, pour in beaten eggs. Scramble and cook until set. Set aside with the chicken.
  • Sauté Vegetables: Add garlic butter to the pan. Sauté onions and mixed vegetables until soft.
  • Add Rice: Stir in cold rice and break apart any clumps. Mix well with the veggies.
  • Combine Everything: Add cooked chicken and scrambled eggs back into the pan. Mix thoroughly.
  • Season: Pour in soy sauce, season with salt, pepper, and a drizzle of sesame oil if desired. Stir-fry for another 2-3 minutes.
  • Finish & Serve: Garnish with green onions and serve hot.

  • Add a splash of teriyaki or yum yum sauce for extra flavor.
  • Make homemade garlic butter by mixing softened butter with minced garlic, a dash of soy sauce, and parsley.
