Alice Springs Chicken Recipe (Outback Copycat)

Make your own version of the famous Alice Springs Chicken at home with juicy chicken breasts, crispy bacon, honey mustard sauce, and melted cheddar cheese. It’s hearty, cheesy, and ready in just 30 minutes!

Ingredients
  

  • 4 pieces of chicken breast – boneless and skinless
  • 6 strips of bacon – fried until golden and crunchy
  • 1 cup mushrooms – thinly sliced baby bella or white
  • 1 tablespoon cooking oil – olive or avocado
  • 1 cup shredded cheddar cheese – preferably sharp
  • ½ cup Dijon mustard
  • ½ cup honey
  • ¼ cup mayonnaise
  • 1 teaspoon ground garlic
  • 1 teaspoon lemon juice optional
  • ¼ teaspoon smoked paprika or chili flakes optional
  • Fresh parsley or chives for garnish optional

Instructions
 

  • Trim and pound chicken breasts to an even thickness.
  • In a bowl, mix Dijon mustard, honey, mayonnaise, garlic, and lemon juice. Set aside half the sauce for serving.
  • Coat the chicken with the remaining sauce and marinate for 20 minutes.
  • While marinating, cook bacon until crispy. Remove and set aside.
  • In the same pan, sauté mushrooms in bacon drippings until browned.
  • In a separate pan, sear chicken breasts in oil for 3–4 minutes per side (don’t fully cook).
  • Transfer chicken to an oven-safe dish. Top with sauce, mushrooms, bacon, and cheese.
  • Bake at 375°F (190°C) for 15–18 minutes, until cheese is melted and chicken reaches 165°F internally.
  • Let rest for 5 minutes. Garnish with parsley and serve hot.

  • For added flavor, let the chicken marinate overnight.
  • Use smoked paprika or chili flakes to add a touch of heat.
  • Swap cheddar with Monterey Jack for a milder cheese blend.
  • For a lighter version, bake instead of searing the chicken.
