Wonton Filling
- 1 lb Ground pork (Choose pork with a little fat for juiciness.)
- 4 ea Scallions, minced
- 1 in Fresh ginger, grated
- 2 cloves Garlic, minced
- 2 tbsp Soy sauce
- 1 tsp Sesame oil (Just a little for flavor.)
- 1 tbsp Shaoxing wine or dry sherry (Optional but recommended.)
- 1-2 tbsp Water or stock (Add to the filling for moisture.)
- Salt To taste
- White pepper To taste
Wonton Soup Broth
- 6 cups Chicken stock or good boxed broth (Use low-sodium if preferred.)
- 2 in Fresh ginger, sliced
- 2 ea Scallions, sliced
- Soy sauce to taste For seasoning
- Salt To taste
- White pepper To taste
To Serve
- 6-10 ea Cooked wontons
- Sliced scallions (For garnish)
- Bok choy or spinach (Optional greens for garnishing.)
- Few drops Sesame oil (Optional for finishing touch.)
Instructions
Prepare Wonton Filling
- In a bowl, mix ground pork, minced scallion, grated ginger, minced garlic, soy sauce, sesame oil, a splash of Shaoxing wine, salt, and a pinch of white pepper.
- Stir in 1 to 2 tablespoons of water or stock until the mixture is slightly sticky and unified.
- Let the filling sit for 10 minutes.
Fold Wontons
- Set up a workspace with wonton wrappers, filling, water, and a tray for finished wontons.
- Place a wrapper on your palm. Add about 1 teaspoon filling in the center.
- Wet two edges with water, fold into a triangle and press out air. Bring long corners together, wet one corner, and pinch to seal.
Prepare the Broth
- Simmer chicken stock with sliced ginger and scallion for 10 to 15 minutes.
- Strain if you want a clear broth or leave the scallion pieces for more flavor.
- Season broth with soy sauce, taste and adjust with salt and white pepper.
Cook Wontons
- Bring a pot of water to a gentle boil and carefully add wontons, cooking for 3 to 5 minutes for fresh wontons or 6 to 8 minutes for frozen without thawing.
Assemble the Soup
- In each bowl, add cooked wontons and ladle hot broth over them.
- Top with sliced scallions and optional greens.
- Finish with a few drops of sesame oil.
Notes
Wontons can be made ahead and frozen. Store broth and wontons separately for best texture when reheating.
