Ingredients

For the dip

  • 1 cup Whole milk ricotta (This gives you the creamiest texture.)
  • 1-2 tablespoons Olive oil (Makes it silky and helps it whip up nicely.)
  • 1 pinch Lemon zest (Optional but brightens everything.)
  • 1-2 teaspoons Lemon juice (Optional, adjust to taste.)
  • 1 pinch Salt (Enhances flavor.)
  • 0 Black pepper (Optional, add to taste.)
  • 1-2 tablespoons Grated parmesan (Optional, for a richer flavor.)

Optional toppings and variations

  • Savory toppings: olive oil drizzle, flaky salt, cracked pepper, chopped basil, roasted tomatoes, garlic confit, chili crisp, toasted pine nuts.
  • Sweet toppings: honey, fig jam, strawberry jam, orange zest, toasted pistachios, sprinkle of cinnamon.


Instructions

Preparation

  1. Add ricotta to your food processor (or a bowl if using a hand mixer).
  2. Add olive oil, salt, and lemon zest if using.
  3. Whip for about 45 to 90 seconds. Stop and scrape the sides once. Keep going until it looks smooth and fluffy.
  4. Taste it. Add a tiny bit of lemon juice if you want brightness, and adjust salt.
  5. Spoon into a bowl, swirl the top, and add your toppings.

Notes

For best results, use whole milk ricotta and whip longer for extra fluffiness. Store in an airtight container for up to 3 days in the fridge.
