Ingredients

Salad Ingredients

  • 4 cups Seedless watermelon, cut into bite sized cubes (Chilled for extra refreshment)
  • 2 cups Cucumbers, sliced or cubed (Persian or English cucumbers preferred for crunch)
  • 1 cup Feta cheese, crumbled (Use block feta for best texture)
  • 1/4 cup Fresh mint, torn or chopped (Add just before serving for freshness)
  • 2 tablespoons Lime juice (Freshly squeezed is best)
  • 1 tablespoon Honey (Adjust based on watermelon sweetness)
  • 1 tablespoon Olive oil (Extra virgin recommended)
  • to taste Salt and black pepper (Add at the end for better texture)


Instructions

Preparation

  1. Cut cold watermelon into cubes and add to a big bowl.
  2. Slice cucumbers into half moons or chunks and add them in.
  3. Sprinkle in crumbled feta.
  4. Add torn mint.
  5. Drizzle with honey lime dressing and toss gently.

Honey Lime Dressing

  1. In a small bowl, stir together lime juice, honey, olive oil, plus a pinch of salt and black pepper.
  2. Taste and adjust the lime and honey as needed.

Notes

Chill for 10-15 minutes for flavors to mingle but avoid letting it sit too long to prevent sogginess. Store ingredients separately if making ahead.
