Wet Ingredients
- 1 cup Pumpkin puree (Not pumpkin pie filling; packed and not soupy.)
- 1/2 cup Brown sugar or coconut sugar (For sweetness.)
- 1/2 cup Plant milk (Like oat or almond milk.)
- 1/4 cup Neutral oil or melted vegan butter (Both options work well.)
- 1 tsp Vanilla extract (For flavor.)
Instructions
Preparation
- Preheat your oven to 350°F and lightly grease a donut pan.
- In a medium bowl, whisk together the flour, baking powder, pumpkin spice, and salt.
- In another bowl, whisk together the pumpkin puree, brown sugar, plant milk, oil, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Spoon or pipe the batter into the donut pan.
Baking
- Bake for about 10 to 13 minutes, or until the tops spring back when touched.
- Let cool in the pan for a few minutes before transferring to a wire rack.
Notes
Let the donuts cool completely before glazing to prevent melting. Can be topped with a simple cinnamon maple glaze, cinnamon sugar, or nut toppings.
