Ingredients

Dry Ingredients

  • 1 cup All purpose flour (Fluffed and spooned into the cup for accurate measurement.)
  • 2 tsp Baking powder
  • 1 tsp Pumpkin spice (Or cinnamon with a pinch of nutmeg and ginger.)
  • 1/4 tsp Salt (To enhance flavors.)

Wet Ingredients

  • 1 cup Pumpkin puree (Not pumpkin pie filling; packed and not soupy.)
  • 1/2 cup Brown sugar or coconut sugar (For sweetness.)
  • 1/2 cup Plant milk (Like oat or almond milk.)
  • 1/4 cup Neutral oil or melted vegan butter (Both options work well.)
  • 1 tsp Vanilla extract (For flavor.)


Instructions

Preparation

  1. Preheat your oven to 350°F and lightly grease a donut pan.
  2. In a medium bowl, whisk together the flour, baking powder, pumpkin spice, and salt.
  3. In another bowl, whisk together the pumpkin puree, brown sugar, plant milk, oil, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  5. Spoon or pipe the batter into the donut pan.

Baking

  1. Bake for about 10 to 13 minutes, or until the tops spring back when touched.
