Ingredients

For the Peach Filling

  • 4 cups sliced fresh, frozen, or canned peaches (drained) (Use ripe peaches for best flavor.)
  • 1/3 cup sugar or brown sugar (A mix of both provides a deeper flavor.)
  • 1 tablespoon lemon juice (Just a splash to brighten the flavor of the peaches.)
  • 2 tablespoons cornstarch or arrowroot powder (Helps thicken the peach juices.)
  • 1/2 teaspoon cinnamon (Optional, but recommended for added flavor.)

For the Topping

  • 1 cup all purpose flour (Can substitute with gluten-free flour.)
  • 2 teaspoons baking powder (Ensure it is gluten-free if needed.)
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1 cup plant milk (Oat, soy, or almond milk work well.)
  • 1/4 cup melted coconut oil or neutral oil
  • 1 teaspoon vanilla extract (Adds flavor.)


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C). Lightly oil an 8×8 inch baking dish.
  2. In a bowl, toss the sliced peaches with sugar, lemon juice, cornstarch, and cinnamon (if using). Pour the mixture into the prepared baking dish and spread evenly.

Baking

  1. In another bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Add the plant milk, melted oil, and vanilla to the dry ingredients. Stir until just combined, leaving a few small lumps.
  3. Spoon or pour the batter over the peach filling. It doesn’t need to cover completely as it will spread while baking.
  4. Bake in the preheated oven for 40 to 50 minutes until the top is golden and the peach juices are bubbling around the edges.
  5. Let cool for 15 minutes before serving to help the filling thicken.

Notes
