These flaky vegan blueberry ghost hand pies are a cute Halloween treat that are easy to make and sure to delight both kids and adults.

For the Blueberry Filling
- 2 cups Blueberries (fresh or frozen) (Do not thaw if using frozen.)
- 1/2 cup Granulated or coconut sugar
- 1 tbsp Cornstarch or arrowroot (To thicken)
- 1 tbsp Lemon juice (Optional but enhances flavor.)
- 1 tsp Vanilla extract
- 1 pinch Salt
For the Puff Pastry
- 1 sheet Vegan puff pastry (store bought) (Check for butter in the ingredients.)
- 1 tbsp Plant milk (For brushing.)
For the Glaze
- 1 cup Powdered sugar (For glaze.)
- 2 tbsp Lemon juice (Adjust for desired consistency.)
Instructions
Prepare the Blueberry Filling
- In a small pot, combine blueberries, sugar, a pinch of salt, and lemon juice. Cook over medium heat until berries start to burst.
- Stir in cornstarch mixed with a small amount of water and keep stirring until the mixture is glossy and thick.
- Remove from heat and allow to cool.
Prepare the Puff Pastry
- Thaw puff pastry in the fridge. If thawed on the counter, keep an eye on it to ensure it remains cool.
- Flour the counter and roll the pastry to smooth seams. Cut into hand-shaped rectangles.
Assemble the Ghost Hand Pies
- Cut two matching hand shapes for each pie. Place a small amount of cooled blueberry filling on the bottom shape.
- Add the top hand shape and press edges together, crimping with a fork. Add little lines for ‘knuckles’ if desired.
Bake the Hand Pies
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- Brush tops lightly with plant milk and cut small slits for steam.
- Bake for 18 to 24 minutes until golden and puffed.
- Let cool on the tray before moving.
Make the Lemon Glaze
- Mix powdered sugar with lemon juice until thick but drizzle-friendly.
- Once pies are cool, drizzle glaze over them.
Notes
Keep the pastry cold and don’t overfill to avoid leaks. You can store, freeze, and reheat the pies efficiently.
