Instructions
Preparation
- Peel the pears, leaving the stems on for presentation. Slice a small amount off the bottom so they can stand upright.
- In a snug pot, combine water, bourbon, sugar, vanilla, cinnamon, and any optional spices.
Poaching
- Bring the poaching liquid to a gentle simmer, stirring to dissolve the sugar.
- Add the pears to the pot and ensure they are mostly submerged. Spoon liquid over them occasionally.
- Simmer gently for 20-35 minutes, or until a knife slides easily into the pears.
Finishing
- Turn off heat and let pears sit in the liquid for at least 20 minutes to absorb more flavor.
- Remove pears carefully and simmer the liquid until it thickens into a glossy syrup.
Notes
Pears can be stored in their syrup for up to 4 days in the refrigerator, and their flavor improves over time. They’re also make-ahead friendly—just reduce the syrup before serving.
