Description
A cozy and creamy Tuscan Chicken Orzo that is easy to make in the slow cooker with tender chicken, sun-dried tomatoes, and fresh spinach.

- 1 lb Boneless skinless chicken breasts or thighs
- 1 cup Sun dried tomatoes (drained)
- 4 cloves Garlic (minced)
- 4 cups Low sodium chicken broth
- 2 tsp Italian seasoning
- 1 cup Heavy cream
- 1 cup Freshly grated Parmesan cheese
- 1 cup Orzo pasta
- 2 cups Fresh baby spinach
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Spray your slow cooker insert or lightly oil it for easier cleanup.
- Add chicken, broth, garlic, Italian seasoning, and sun dried tomatoes.
- Cook on low for 240 to 360 minutes or high for 120 to 180 minutes, until the chicken is cooked through.
- Shred or slice the chicken right in the slow cooker.
- Stir in heavy cream and Parmesan cheese.
- Add orzo, stir well, then cook on high for 20 to 35 minutes, stirring once or twice.
- Stir in spinach at the end and let it wilt for a few minutes.
- Taste and adjust salt, pepper, and optional red pepper flakes.
Notes
Use thighs for a juicier chicken. Adjust cooking time according to your slow cooker.
