Units Scale

Main Ingredients

  • 2 cans canned tomatoes (Whole peeled or diced tomatoes work well.)
  • 1 medium onion, chopped (Adds sweetness when caramelized.)
  • 2 cloves garlic, minced (For flavor.)
  • 2 tbsp tomato paste (Deepens the tomato flavor.)
  • 4 cups broth (chicken or vegetable) (Prevents the soup from being too tomato-centric.)
  • 1 cup cream or dairy-free option (Adds a silky finish.)
  • 2 tbsp butter or olive oil (For richness.)
  • to taste salt
  • to taste pepper
  • 1/4 tsp sugar (To balance acidity.)

Instructions

Preparation

  1. In a soup pot, warm butter or olive oil. Add chopped onion with a pinch of salt and cook until soft, about 5 to 7 minutes.
  2. Add minced garlic and cook for 30 seconds, just until fragrant.
  3. Stir in tomato paste and cook for 1 to 2 minutes until it deepens in color.
  4. Add canned tomatoes (juice and all) and broth. Bring it to a gentle simmer.
  5. Simmer for 15 to 20 minutes, then blend until smooth.
  6. Stir in cream, taste, and adjust seasoning as necessary.

Notes

This soup is great for meal prep. It tastes even better the next day. Store in a sealed container for up to 4 days in the fridge or freeze for up to 3 months.
