Tomato Filling

- 3-4 cloves garlic, minced
- 2 tablespoons olive oil

- 1.5 tablespoons cornstarch or flour (To thicken.)
- 1-2 teaspoons sugar (Only if tomatoes need it.)
- 1 teaspoon kosher salt (Plus more to taste.)

- handful chopped basil
- 1 tablespoon balsamic vinegar or lemon juice
Pimento Cheese Biscuits
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1 teaspoon kosher salt
- 6 tablespoons cold butter, cubed
- 3/4 cup cold buttermilk (Plus more if needed.)
- 1 cup shredded sharp cheddar
- 1/3 cup pimentos, drained and chopped
- 2 tablespoons mayo or cream cheese (Optional for pimento cheese vibe.)
Instructions
Make the Tomato Filling
- Heat olive oil in a big skillet and add the diced onion. Cook until it softens.
- Stir in the minced garlic for about 30 seconds.
- Add chopped tomatoes and any juices from the cutting board. Season with salt, pepper, and thyme.
- Let it simmer for 10 to 15 minutes until tomatoes break down and liquid reduces.
- If using, stir in tomato paste, then sprinkle cornstarch and stir well.
- Add sugar if the tomatoes taste sharp or flat, then finish with basil and balsamic or lemon.
- Pour into a greased baking dish.
Make the Pimento Cheese Biscuits
- In a bowl, mix flour, baking powder, sugar, and salt.
- Cut in cold butter until it resembles crumbs.
- Stir in cheddar and pimentos, and add mayo/cream cheese if desired.
- Pour in cold buttermilk and stir until it comes together. Adjust with more buttermilk if needed.
- Use a scoop to place biscuit dough on top of the tomato filling.
Bake the Cobbler
- Bake at 400°F for 25 to 35 minutes until filling bubbles and biscuits are golden.
- Cover loosely with foil if biscuits brown too fast.
- Let rest for 10 to 15 minutes before serving.
