  • 2 cups cooked chicken, shredded or sliced (Rotisserie chicken works great.)
  • 4 cups mixed greens (romaine, napa cabbage, or coleslaw mix) (Use a sturdy base for crunch.)
  • 1 cup carrots, shredded (Add for extra crunch.)
  • 1 cup cucumber, thin sliced
  • 1 cup red bell pepper, thin sliced
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, optional (Adds flavor.)
  • 1/4 cup peanuts or cashews (For crunch.)
  • 1 unit lime, cut into wedges (For serving.)

Dressing Ingredients

  • 1/2 cup peanut butter (Creamy is easiest.)
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce (Use low sodium if concerned.)
  • 1-2 tablespoons honey or maple syrup (For sweetness.)
  • 1 teaspoon sriracha or chili garlic sauce (Add more for extra heat.)
  • 1-2 tablespoons warm water (To adjust consistency.)


Instructions

Preparation
