- 2 to 2.5 pounds chicken thighs (boneless skinless) or chicken breasts
- 1/2 cup low sodium soy sauce
- 1/3 cup honey or brown sugar
- 2 tablespoons rice vinegar or apple cider vinegar
- 1 tablespoon sesame oil (optional)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated or 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 to 2 tablespoons cornstarch plus 2 tablespoons cold water (for thickening)
- Optional toppings: sliced green onions, sesame seeds, steamed broccoli
Instructions
- Add the chicken to your slow cooker.
- Pour the mixed homemade teriyaki sauce over the chicken.
- Cover and cook until the chicken is tender.
- Shred or slice the chicken, then thicken the sauce in the crockpot.
- Spoon the glossy sauce over everything and serve.
Notes
Use chicken thighs for juiciness and do not lift the lid while cooking. For thickening the sauce, mix cornstarch with cold water before adding it to the crockpot.
