Main Ingredients

  • 4 pieces boneless, skinless chicken breasts (Slice each breast in half horizontally for even cooking.)
  • 8 ounces cremini or white button mushrooms, sliced (Mushrooms make the dish heartier.)
  • 2 tablespoons butter or olive oil (Use both for more flavor if desired.)
  • 2 cloves garlic, minced (Fresh garlic is recommended.)
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream (Or use half and half for a lighter option.)
  • 1 tablespoon fresh or dried tarragon (Use about one third the amount if using dried.)
  • 1 tablespoon Dijon mustard (Adds depth of flavor.)

  • 1 squeeze lemon (Optional for added brightness.)

Instructions

Preparation

  1. Pat the chicken dry with paper towels and slice each breast horizontally into thinner cutlets.
  2. Season both sides of the chicken with salt and pepper and let sit for 10 minutes if time allows.

Cooking the Chicken

  1. In a hot skillet, cook the chicken in butter or oil until golden and cooked through, about 4-5 minutes per side.
  2. Remove the chicken and cover loosely to keep warm.

Making the Sauce

  1. In the same skillet, add more butter if necessary and sauté the sliced mushrooms until they gain some color.
  2. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Pour in chicken broth and scrape the browned bits off the bottom of the skillet.
  4. Stir in Dijon mustard and simmer for a few minutes.
  5. Lower the heat, add the heavy cream, and sprinkle in the tarragon. Adjust salt and pepper to taste.
  6. Return the chicken to the skillet and spoon sauce over it. Simmer gently for a few minutes until combined.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently and add a splash of broth or cream to loosen the sauce.
