  • 1 can Diced tomatoes (Provides the soup base.)
  • 1 can Green chiles (For mild heat.)
  • 1 cup Corn (Balances spice with sweetness.)
  • 4 cups Broth (beef or vegetable) (Controls the soup thickness.)

Instructions

Stovetop Preparation

  1. Brown the ground beef in a big pot over medium heat. Break it up as it cooks. If there is a lot of grease, drain it.
  2. Add chopped onion and cook for a few minutes until it softens. Stir in garlic for about 30 seconds.
  3. Sprinkle in taco seasoning and stir it around to coat the meat.
  4. Add beans, diced tomatoes, green chiles, corn, and broth.
  5. Bring to a gentle simmer and let it cook for 10 to 15 minutes. Taste and adjust salt, spice, and thickness.

Slow Cooker Preparation

  1. Brown the ground beef, then add it to the slow cooker with the onion, garlic, taco seasoning, beans, tomatoes, chiles, corn, and broth.
  2. Cook on low for 6 to 8 hours or high for 3 to 4 hours. Stir before serving and adjust seasoning.

Notes
