Instructions
Roast Sweet Potatoes
- Preheat the oven to 425°F (220°C). Cube sweet potatoes into bite-sized pieces.
- Toss sweet potatoes with olive oil, salt, pepper, and optional chili powder or smoked paprika.
- Spread sweet potatoes on a sheet pan, ensuring they are not crowded.
- Roast for 22 to 30 minutes, flipping once, until tender with browned edges.
Cook Taco Meat
- Heat a skillet over medium heat and add a little oil.
- Cook the ground turkey or beef, breaking it up as it cooks.
- Once mostly cooked, sprinkle in taco seasoning and add a splash of water or broth.
- Let it simmer for a few minutes to create a light sauce that coats the meat.
- Optional: add a spoonful of salsa for added flavor.
Assemble Taco Bowl
- Start with roasted sweet potatoes as the base in each bowl.
- Add a scoop of the taco meat on top.
- Layer greens, beans, corn, salsa, avocado, and a drizzle of Greek yogurt or sauce.
- Finish with chopped cilantro and a squeeze of lime.
- Optionally sprinkle a pinch of salt on top.
