  • 2 medium to large sweet potatoes, peeled or unpeeled
  • 1 pound ground turkey or ground beef
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons taco seasoning (store bought or homemade)

  • 1 can black beans (optional, but great)
  • 1 cup corn (optional)
  • 2 cups romaine or shredded lettuce
  • 1 cup salsa or pico de gallo
  • 1 medium avocado or guacamole
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup fresh cilantro
  • 1 medium lime


Instructions

Roast Sweet Potatoes

  1. Preheat the oven to 425°F (220°C). Cube sweet potatoes into bite-sized pieces.
  2. Toss sweet potatoes with olive oil, salt, pepper, and optional chili powder or smoked paprika.
  3. Spread sweet potatoes on a sheet pan, ensuring they are not crowded.
  4. Roast for 22 to 30 minutes, flipping once, until tender with browned edges.

Cook Taco Meat

  1. Heat a skillet over medium heat and add a little oil.
  2. Cook the ground turkey or beef, breaking it up as it cooks.
  3. Once mostly cooked, sprinkle in taco seasoning and add a splash of water or broth.
  4. Let it simmer for a few minutes to create a light sauce that coats the meat.
  5. Optional: add a spoonful of salsa for added flavor.

Assemble Taco Bowl

  1. Start with roasted sweet potatoes as the base in each bowl.
  2. Add a scoop of the taco meat on top.
  3. Layer greens, beans, corn, salsa, avocado, and a drizzle of Greek yogurt or sauce.
  4. Finish with chopped cilantro and a squeeze of lime.
