Instructions
Preparation
- Preheat oven to 425°F (220°C).
- Cut sweet potatoes into small cubes, about 1/2 inch.
- Toss sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
Cooking
- Spread sweet potatoes on a baking sheet in a single layer. Roast for 22 to 28 minutes, flipping halfway, until tender with browned edges.
- In a large skillet, cook ground beef over medium heat. Break it up, season with salt, pepper, garlic powder, and paprika. Cook until no longer pink, then drain excess grease if necessary.
Making the Sauce
- In a small bowl, mix mayo, ketchup, mustard, pickle juice, garlic powder, paprika, and black pepper. Taste and adjust as needed.
- Refrigerate sauce while cooking the beef.
Assembly
- In a bowl, start with lettuce, add sweet potatoes, beef, and desired toppings like pickles, tomatoes, onion, and cheese.
