Ingredients

Salad Ingredients

  • 2 pieces ripe peaches, sliced (Use sweet, ripe peaches for best flavor.)
  • 4 to 6 cups greens (arugula, spinach, spring mix, or chopped romaine) (Choose your favorite greens.)
  • 1 small cucumber, sliced or chopped (Adds crunch and freshness.)
  • 1 cup cherry tomatoes, halved (Optional, adds color and sweetness.)
  • 1 small avocado, sliced (Optional, adds creaminess.)
  • 1/3 cup crumbled feta or goat cheese (Optional, adds saltiness.)
  • 1/4 cup toasted nuts (pecans, almonds, or walnuts) (Enhances flavor with nuttiness.)
  • a few leaves fresh basil or mint, torn (Optional, adds a fresh aroma.)
  • to taste salt and black pepper (To enhance the overall flavor.)

Dressing Options

  • 2 tablespoons olive oil (Base for honey lemon dressing.)
  • 1 tablespoon lemon juice (For honey lemon dressing.)
  • 1-2 teaspoons honey (Adjust sweetness of honey lemon dressing.)
  • 1 teaspoon Dijon mustard (For honey lemon dressing.)
  • 1 tablespoon balsamic vinegar (Base for balsamic dressing.)
  • 1 teaspoon honey or maple syrup (For balsamic dressing.)

Instructions

Preparation

  1. Wash and dry your greens well to avoid sogginess.
  2. Toast the nuts in a dry pan for a few minutes until fragrant, then let them cool.
  3. Slice peaches last so they stay juicy and don’t brown.
  4. In a large bowl, layer the greens, peaches, cucumber, tomatoes, and avocado.
  5. Drizzle the dressing lightly, toss gently, and then top with cheese and nuts.

Notes

Taste one bite before serving and adjust seasoning with a pinch of salt if needed. Dry greens make a big difference in the final texture.
