Ingredients
For the Cookie Base
- 1 cup Unsalted butter, softened (For rich flavor)
- 1 cup Granulated sugar
- 2 large Eggs
- 1 teaspoon Vanilla extract (Do not skip)
- 3 cups All purpose flour (Measure lightly)
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
For the Frosting
- 1/2 cup Butter, softened
- 2 cups Powdered sugar
- 1 tablespoon Milk or cream (Add more to thin if necessary)
- 1 teaspoon Vanilla extract
- a pinch Salt
Optional Toppings
- Rainbow sprinkles (For decoration)
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line a 9×13 pan with parchment paper or lightly grease it.
- In a mixing bowl, cream the softened butter and granulated sugar until fluffy and light in color, about 2 to 3 minutes.
- Add eggs one at a time, followed by the vanilla extract, mixing well and scraping down the sides of the bowl.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually stir this mixture into the wet ingredients just until combined.
- Press the thick dough into the prepared pan using lightly greased hands or the back of a spoon.
Baking
- Bake for 18 to 24 minutes, until the edges are set and just lightly golden, while the center remains soft.
- Allow the bars to cool completely in the pan before frosting.
Frosting
- For the frosting, beat together the softened butter, powdered sugar, vanilla, and a pinch of salt.
- Gradually add milk until the desired consistency is achieved. Frost the cooled bars with this mixture.
- Decorate with rainbow sprinkles if desired.
Notes
For variations, consider adding flavors such as almond extract instead of vanilla or mix-ins like chocolate chips. These bars can be frozen both frosted and unfrosted for later enjoyment. Store in an airtight container for up to 5 days in the fridge.
