Preparation
- Sauté diced onion and celery in butter until soft, about 5 to 7 minutes, then let them cool.
- In a big bowl, add stuffing mix, the cooked veggies, and chopped herbs if using.
- Whisk eggs with warm broth, then pour over the stuffing mix. Stir gently and let sit for 5 minutes.
- Test the texture. It should feel moist and hold together when squeezed. Adjust with more broth or stuffing mix as necessary.
Baking
- Roll the mixture into medium-sized balls (about 1.5 inches) and place on a greased baking sheet.
- Bake at 375°F for 18 to 24 minutes until golden brown on top.
