For the dip
- 8 oz Cream cheese, softened (Helps create a rich base.)
- 1 cup Sour cream or Greek yogurt (For tang and creaminess.)
- 1 cup Shredded mozzarella (Provides stretch and melt.)
- 1 cup Parmesan, grated (Brings salty, nutty flavor.)
- 2 cups Spinach, fresh or frozen, thawed and drained (Fresh is bright; frozen is easier.)
- 1 cup Artichoke hearts, drained and chopped (Choose canned in water or brine.)
- 2 cloves Garlic, minced (For flavor enhancement.)
- 1 tsp Salt
- 1 tsp Black pepper
- 1 pinch Red pepper flakes (Optional for a gentle kick.)
Instructions
Preparation
- Spray the inside of your slow cooker with nonstick spray.
- Add softened cream cheese, sour cream, mozzarella, Parmesan, garlic, salt, and pepper to the slow cooker.
- Stir until mixed; it will appear chunky at first.
- Add drained spinach and chopped artichoke hearts, then stir again.
Cooking
- Cover and cook on low for about 2 to 3 hours, stirring once or twice.
- Alternatively, cook on high for 1 to 1.5 hours, stirring more frequently.
- Check for a smooth, creamy mixture and stir well until no chunks remain.
Notes
To keep the dip warm, switch the slow cooker to the warm setting after it has cooked. Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat gently on low heat, adding a bit of sour cream if it has thickened.
