- 2 cups All-purpose flour
- 2 teaspoons Baking powder
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 teaspoon Ground cinnamon (Main spice flavor)
- 1/2 teaspoon Ground ginger (Optional but recommended)
- 1/4 teaspoon Nutmeg or cloves (Optional)
Wet Ingredients
- 1 cup Brown sugar (For depth of flavor)
- 2 large Eggs
- 1 cup Milk or buttermilk (Choose based on preference)
- 1/2 cup Neutral oil or melted butter (Oil keeps muffins moist longer)
- 1 teaspoon Vanilla extract
Main Ingredient
- 2 cups Ripe pears, peeled and diced (Use ripe but not mushy pears)
Instructions
Preparation
- Preheat your oven to 400°F (200°C) and line a muffin pan with paper liners or lightly grease it.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg/cloves.
- In a larger bowl, whisk together the brown sugar, eggs, milk (or buttermilk), oil (or melted butter), and vanilla extract.
- Gently fold the dry ingredients into the wet ingredients until just combined; the batter should be lumpy.
- Fold in the diced pears gently.
Baking
- Fill each muffin cup almost to the top and bake in the preheated oven at 400°F (200°C) for 5 minutes.
- Then reduce the temperature to 350°F (175°C) and bake for another 12 to 16 minutes, or until a toothpick inserted comes out mostly clean.
Cooling
- Let the muffins cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For bakery-style muffins, fill the cups high, start with a hot oven and do not overmix. Store in an airtight container for 2-3 days or freeze for up to 2 months. Add a sprinkle of coarse sugar on top before baking for extra crunch.
