Description

A cozy, tangy, and creamy Southern Tomato Pie made with ripe summer tomatoes, perfect for any occasion.


Ingredients

For the pie crust

  • 1 prepared pie crust 1 prepared pie crust (Store bought or homemade)

For the filling

  • 4 cups 4 cups ripe tomatoes, sliced (Use a mix of beefsteak and Roma tomatoes)
  • 1 teaspoon 1 teaspoon salt (For drawing out moisture from the tomatoes)
  • 1 cup 1 cup mayonnaise (Classic Southern move)
  • 1.5 cups 1 1/2 cups shredded cheese (Mix of cheddar and mozzarella)
  • 1 teaspoon 1 teaspoon black pepper (To taste)
  • 1 pinch 1 pinch garlic powder (Optional for flavor)
  • 1 tablespoon 1 tablespoon fresh basil (Chopped, adds garden flavor)
  • 1 optional Green onion or sweet onion (For additional flavor)
  • 1 pinch 1 pinch cayenne (Optional for heat)

Instructions

Preparation

  1. Preheat your oven to 375°F (190°C).
  2. Fit your pie crust into a pie plate, pricking the bottom lightly with a fork.
  3. Blind bake the crust for about 10 minutes and let it cool.
  4. Slice the tomatoes about a quarter inch thick and lay them on a baking sheet lined with paper towels. Sprinkle both sides lightly with salt and let them sit for 20 to 30 minutes.
  5. Blot the tomatoes with more paper towels to remove excess moisture.

Preparation of Filling

  1. In a bowl, mix together the mayonnaise, shredded cheese, black pepper, and garlic powder. If using onion, stir in during this step.

Assembly

  1. Layer the sliced tomatoes in the baked pie crust, sprinkling chopped basil and onion (if using) between layers.
  2. Spread the cheese mixture over the top, sealing it to the edges.

Baking

  1. Bake at 375°F (190°C) for 30 to 35 minutes, until the top is golden and bubbly.
  2. Allow the pie to rest for at least 15 minutes before slicing.

Notes

Store leftovers covered in the fridge for about 3 days. Reheat in the oven at 350°F (175°C) for 10 to 15 minutes.
