  • 1 pound Black eyed peas (dried) (Dried is best for flavor, canned works in a pinch.)
  • 1 piece Smoked turkey (neck, wing, leg, or a meaty piece) (Gives a smoky flavor; can use ham hocks as an alternative.)
  • 1 medium Onion (Chopped.)
  • 1 medium Bell pepper (Chopped.)
  • 2 stalks Celery (Chopped.)
  • 3 cloves Garlic (Minced.)
  • 6 cups Chicken broth or water (Broth gives a richer flavor.)
  • 1 leaf Bay leaf
  • 1 teaspoon Black pepper (Add more to taste.)
  • 1/4 teaspoon Cayenne pepper (Optional for heat.)
  • Salt to taste Salt (Added carefully at the end.)

Instructions

Preparation

  1. Rinse the peas and pick out any stones or weird bits.
  2. In a large pot or Instant Pot, sauté the onion, bell pepper, and celery with a little oil until softened.
  3. Add garlic, black pepper, and bay leaf, stirring for about 30 seconds.
  4. For the Instant Pot, add peas, smoked turkey, and broth. Pressure cook on high for about 20 to 25 minutes, followed by a natural release.
  5. For stovetop, add peas, smoked turkey, and enough broth or water to cover by about 2 inches. Bring to a gentle boil, then lower to a steady simmer and partially cover.
  6. Stir occasionally and add more liquid if it gets too thick before the peas are tender.
  7. When done, shred turkey, add it back into the pot, and salt to taste.

Notes

Black-eyed peas taste even better the next day. They are great served with cornbread and greens, especially on New Year’s Day for good luck. Can be refrigerated for up to 4 days or frozen for 3 months.
