  • 3/4 cup Seedless grapes, halved (Cut large grapes into quarters.)
  • 1-2 tablespoons Sweet pickle relish (Optional but recommended.)
  • to taste Salt and black pepper (Adjust according to personal preference.)
  • a small pinch Garlic powder or onion powder (Optional, for additional seasoning.)

Instructions

Preparation

  1. In a pot, cover boneless chicken breasts (or thighs) with water or chicken broth, add a pinch of salt, and bring to a simmer. Cook for 12 to 18 minutes until chicken is done.
  2. Let the chicken cool slightly, then shred or chop it into small pieces.

Mixing

  1. In a large bowl, combine the shredded chicken, mayo, diced celery, halved grapes, and relish (if using). Stir gently to coat the ingredients.
  2. Add salt and pepper to taste. If needed, add a pinch of garlic powder or onion powder.
  3. Cover and chill for at least 30 minutes to an hour to allow the flavors to meld.
