Ingredients

Main Ingredients

  • 2 pounds Boneless skinless chicken breasts (or thighs for juicier meat)
  • 1 cup Olive Garden Italian dressing (the bottled version)
  • 8 ounces Cream cheese (full fat melts the smoothest)
  • 1/2 cup Grated Parmesan cheese (shelf stable or freshly grated)
  • 1/2 teaspoon Black pepper
  • optional Garlic powder or Italian seasoning (for additional flavor)
  • for serving Pasta, rice, or mashed potatoes (your choice)


Instructions

Preparation

  1. Place the chicken breasts in the bottom of your slow cooker in a single layer.
  2. Pour the Olive Garden Italian dressing over the chicken, ensuring most of the chicken is coated.
  3. Cut the cream cheese into chunks and place on top of the chicken.

Cooking

  1. Cover and cook on LOW for about 5 to 6 hours or HIGH for about 3 to 4 hours until the chicken shreds easily with a fork.

Finishing

  1. Shred the chicken in the crockpot and stir well to combine with the cream cheese and dressing.
  2. Add Parmesan and black pepper, let sit for 10 minutes to thicken.
  3. Serve over pasta, rice, or potatoes. If using pasta, mix cooked noodles in just before serving.

Notes

For juicier chicken, thighs can be substituted. Let cream cheese sit at room temperature for easier melting. Avoid cooking pasta in the slow cooker; cook separately and combine later.
