Main Ingredients
- 1 lb Beef cut into bite-size pieces (Chuck roast or stew meat is preferred for tenderness.)
- 2 lbs Baby potatoes (gold or red) (Cut larger potatoes in half.)
- 1/2 cup Butter (Can substitute with ghee or dairy-free butter.)
- 4 cloves Garlic, minced (Fresh is best, but jarred is acceptable.)
- 2 cups Beef broth or stock
- to taste Salt and black pepper (Season generously.)
- 1 tsp Paprika (Optional, adds warmth.)
- 1 tsp Italian seasoning or dried parsley
Finishing Touches
- 1 tbsp Fresh parsley, chopped (For garnish, optional.)

Preparation
- Wash the baby potatoes and cut any large ones in half.
- Cut the beef into bite-size chunks and season with salt, pepper, and paprika if using.
Cooking
- Add potatoes to the bottom of the slow cooker.
- Add beef on top of the potatoes.
- Pour in beef broth.
- Add garlic and butter over everything.
- Sprinkle with Italian seasoning or dried parsley.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4.5 hours until beef is tender and potatoes are fork soft.
- Stir gently, taste, and adjust salt at the end.
Notes
For added flavor, consider searing the beef before adding it to the slow cooker. Adjust seasonings to taste, as slow cooking can mellow flavors. Leftovers improve in flavor and can be stored for up to 4 days in the fridge or up to 3 months in the freezer.
