  • 2 pounds Beef cut into bite sized chunks (Chuck roast, stew meat, or bottom round works best.)
  • 1.5 pounds Baby potatoes or chopped potatoes (Baby Yukon gold or red potatoes are preferred.)
  • 1/2 cup Butter (Melted for the sauce.)
  • 4 cloves Garlic fresh minced (Jar garlic works, but fresh is best.)
  • 2 cups Beef broth or stock (Use low-sodium if preferred.)
  • 1 teaspoon Salt (Adjust seasoning at the end.)
  • 1 teaspoon Black pepper (To taste.)
  • 1 teaspoon Onion powder (Or a chopped onion.)
  • 1 teaspoon Italian seasoning (Optional; add to taste.)
  • 1 tablespoon Parsley (Optional; for garnish.)
  • 1/2 teaspoon Paprika (Optional; for a flavor twist.)


Instructions

Preparation

  1. Spray or lightly butter the inside of your slow cooker.
  2. Add the potatoes to the bottom for even cooking.
  3. Add the beef on top.
  4. Season with salt, pepper, onion powder, and any herbs you like.
  5. Melt the butter and stir in garlic, then pour it over everything.
  6. Add broth around the sides to avoid rinsing off the seasoning.
  7. Cover the slow cooker and cook on low for 7 to 8 hours or on high for 3.5 to 4.5 hours until the beef is tender and the potatoes are soft.
  8. Finish with chopped parsley if desired.

Notes

Potatoes can be added halfway through the cooking time for firmer texture. Keep lid closed during cooking to maintain heat.
