- 1 lb ground beef (lean preferred)
- 4 cups diced potatoes (russet or Yukon gold)
- 1 can beans (pinto, black, or kidney, drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 can diced tomatoes (with juices)
- 1 small onion (optional)
- 1 packet ranch seasoning (store-bought or homemade)
- 1 tsp spices (chili powder, paprika, garlic powder (to taste))
- 1/2 cup broth (beef or chicken for moisture)
- 2 cups cheese (cheddar preferred)

Preparation
- Brown the ground beef in a skillet with a pinch of salt, then drain excess grease if needed.
- Spray the slow cooker with nonstick spray or lightly grease it.
- Add diced potatoes to the bottom of the slow cooker, then scatter in onions if using.
- Spoon in the cooked beef, then add beans, corn, and diced tomatoes.
- Sprinkle ranch seasoning and spices over the top.
- Pour in a little broth for moisture.
Cooking
- Cover and cook on low for 6 to 7 hours until the potatoes are tender.
- Stir in the cheese and let it melt before serving.
Notes
For a thicker texture, do not add too much broth and use low-moisture tomatoes. Layering matters; place harder ingredients like potatoes at the bottom.
