- 4 cups Corn (frozen, canned, or a mix) (If using canned, drain well.)
- 1 tablespoon Butter
- 8 ounces Cream cheese (Cut into cubes for easier melting.)
- 1 cup Heavy cream or half and half (Adjust depending on richness desired.)
- 2 cups Cheddar cheese (shredded) (Sharp is recommended for best flavor.)
- 6 slices Bacon, cooked and crumbled (Reserve some for topping.)
- 1 teaspoon Salt (Adjust to taste.)
- 1 teaspoon Black pepper (Adjust to taste.)
- 1 pinch Sugar (Optional, only if corn is not sweet.)

Preparation
- Put corn, butter, cream cheese, and cream into the slow cooker. Sprinkle in a little salt and pepper.
- Cover and cook on low for 2.5 to 4 hours, stirring occasionally, until everything is melted and creamy.
- Stir in shredded cheddar and let it melt for a few minutes.
- Fold in most of the crumbled bacon, saving a little for topping.
- Taste and adjust seasoning with salt and pepper as necessary.
Notes
This dish is forgiving and can be adjusted to your taste. Use lighter cream cheese, omit bacon, or use turkey bacon as needed. Leftovers can be stored in the fridge for up to 3-4 days.
