A hearty, flavorful chili that cooks hands-off in the slow cooker, perfect for feeding a crowd or meal prepping for the week.

- 1 lb Ground beef (80 to 90 percent lean) (Use 85 percent lean for best flavor without excess grease.)
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 medium Bell pepper, diced (optional) (Use if preferred.)
- 28 oz Crushed tomatoes
- 15 oz Tomato sauce
- 15 oz Beans (kidney, pinto, or black beans) (Drained and rinsed.)
- 2 cups Beef broth (Or water in a pinch.)
- 2 tbsp Chili powder (Main seasoning.)
- 1 tsp Cumin
- 1 tsp Smoked paprika (Optional, adds a smoky flavor.)
- 1 tsp Salt
- 1 tsp Pepper
- 1 tbsp Brown sugar (optional) (Helps round out flavors.)
Instructions
Preparation
- Step 1: Brown the beef in a skillet with diced onion until the beef is no longer pink. Drain excess grease if needed.
- Step 2: Transfer the cooked beef and onion to the slow cooker. Add garlic, tomatoes, tomato sauce, drained beans, beef broth, and all seasonings.
Cooking
- Step 3: Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours. LOW is preferred for better flavor blending.
- Step 4: About 30 minutes before serving, taste and adjust seasonings. Add more salt, chili powder, or a pinch of sugar if desired.
- Step 5: For a thicker chili, crack the lid for the last 20 to 30 minutes or mash a scoop of beans and stir back in.
Notes
This chili is great with toppings like shredded cheddar, sour cream, and green onions. It’s meal prep friendly and can be made ahead.
