- 1/4 cup Fresh lemon juice (Add lemon zest for extra brightness if desired)
- 2 tablespoons Capers (Adjust according to taste)
- 2 cloves Garlic, minced (Fresh or jarred garlic can be used)
- 2 tablespoons Butter (Add at the end for a rich finish)
- 2 tablespoons Flour or cornstarch (Use cornstarch for a gluten-free option)
- 1 teaspoon Salt (Be cautious if the broth is salty)
- 1 teaspoon Pepper
- 1 teaspoon Italian seasoning (Or dried parsley)
Instructions
Preparation
- Lightly season the chicken with salt and pepper.
- Add chicken to the slow cooker. Pour in broth, lemon juice, minced garlic, and Italian seasoning.
- Add capers, adjusting amount to taste.
Cooking
- Cook on LOW for about 3 to 4 hours, until the chicken is cooked through and tender.
- Once cooked, remove the chicken to a plate.
- To thicken the sauce, whisk flour or cornstarch with a little water, then stir it into the hot liquid in the slow cooker. Let it heat until thickened.
- Stir in the butter at the end for a silky sauce.
- Return the chicken to the sauce and spoon it over the chicken. Taste and adjust with more lemon, pepper, or salt as needed.
Notes
For best results, avoid overcooking the chicken, add butter at the end, and thicken the sauce after cooking. Store leftovers in an airtight container for up to 3 to 4 days, or freeze for 2 to 3 months.
