A cozy and easy one-pot meal filled with tender chicken, smoky sausage, and flavorful Cajun rice, perfect for weeknight dinners without the hassle of multiple pots.

Main Ingredients
- 1 lb boneless skinless chicken thighs (Chicken breasts can also be used.)
- 8 oz Andouille sausage (Sliced into coins; regular smoked sausage is also fine.)
- 1 cup bell peppers (Mix of red and green preferred.)
- 1 medium onion (Chopped.)
- 2 stalks celery (Chopped.)
- 4 cloves garlic (Mince before adding.)
- 1 can diced tomatoes (With juices.)
- 4 cups chicken broth
- 1.5 cups long grain white rice (Added at the end of cooking.)
- 2 tbsp Cajun seasoning (Adjust spice level to taste.)
- 1 tbsp paprika
- 1 tsp thyme
- 1 leaf bay leaf
- to taste salt and black pepper (Salt should be added later to prevent oversalting.)
- optional hot sauce (For additional heat.)
- 1/4 cup green onions (Chopped for garnish.)
- 1/4 cup parsley (Chopped for garnish.)
Instructions
Preparation
- Chop the onion, celery, and peppers. Slice the sausage. Mince the garlic.
- Add chicken, sausage, onion, celery, bell peppers, garlic, diced tomatoes, and chicken broth to the slow cooker.
- Stir in Cajun seasoning, paprika, thyme, and black pepper, and add a bay leaf.
Cooking
- Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender.
- Shred or chop the chicken into bite-sized pieces inside the slow cooker.
- Add the rice and cook for an additional 45 to 75 minutes until the rice is tender.
Finishing Touches
- Taste and adjust with extra salt or hot sauce as needed.
- Finish with chopped green onions or parsley for a fresh pop.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat with a splash of broth or water to restore moisture.
