Description

A cozy and easy one-pot meal filled with tender chicken, smoky sausage, and flavorful Cajun rice, perfect for weeknight dinners without the hassle of multiple pots.


Ingredients

Main Ingredients

  • 1 lb boneless skinless chicken thighs (Chicken breasts can also be used.)
  • 8 oz Andouille sausage (Sliced into coins; regular smoked sausage is also fine.)
  • 1 cup bell peppers (Mix of red and green preferred.)
  • 1 medium onion (Chopped.)
  • 2 stalks celery (Chopped.)
  • 4 cloves garlic (Mince before adding.)
  • 1 can diced tomatoes (With juices.)
  • 4 cups chicken broth
  • 1.5 cups long grain white rice (Added at the end of cooking.)
  • 2 tbsp Cajun seasoning (Adjust spice level to taste.)
  • 1 tbsp paprika
  • 1 tsp thyme
  • 1 leaf bay leaf
  • to taste salt and black pepper (Salt should be added later to prevent oversalting.)
  • optional hot sauce (For additional heat.)
  • 1/4 cup green onions (Chopped for garnish.)
  • 1/4 cup parsley (Chopped for garnish.)


Instructions

Preparation

  1. Chop the onion, celery, and peppers. Slice the sausage. Mince the garlic.
  2. Add chicken, sausage, onion, celery, bell peppers, garlic, diced tomatoes, and chicken broth to the slow cooker.
  3. Stir in Cajun seasoning, paprika, thyme, and black pepper, and add a bay leaf.

Cooking

  1. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is tender.
  2. Shred or chop the chicken into bite-sized pieces inside the slow cooker.
  3. Add the rice and cook for an additional 45 to 75 minutes until the rice is tender.

Finishing Touches

  1. Taste and adjust with extra salt or hot sauce as needed.
  2. Finish with chopped green onions or parsley for a fresh pop.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat with a splash of broth or water to restore moisture.
