Description

A hands-off, juicy chicken breast recipe made in the slow cooker, perfect for busy weeknights with endless meal options.


Ingredients

Main Ingredients

  • 2-3 pounds Boneless skinless chicken breasts
  • 3/4 cup Chicken broth (or stock)
  • 1 tablespoon Olive oil or melted butter (Optional but recommended)
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika (For color and warmth)


Instructions

Preparation

  1. Lightly grease your slow cooker or add a liner.
  2. Pour in the chicken broth.
  3. Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and paprika. Optionally, drizzle with olive oil or melted butter.
  4. Lay the chicken in the slow cooker in a single layer. If they overlap, that’s fine, just avoid stacking them.

Cooking

  1. Cover and cook on Low for about 2.5 to 4 hours or High for 1.5 to 2.5 hours, until the chicken reaches 165 F in the thickest part.
  2. Remove the chicken and let it rest for 5 to 10 minutes before slicing or shredding.

Notes

For added flavor, a squeeze of lemon can be used at the end. Keep some cooking liquid to maintain moisture when shredding.
