Description

This cozy and filling slow cooker chicken and stuffing is a stress-free dinner that feels homemade, perfect for busy weeknights.

Ingredients

Main Ingredients

  • 2 pounds chicken (breasts or thighs) (Thighs are more forgiving and juicy compared to breasts.)
  • 1 box boxed stuffing mix (classic herb style) (This is the most traditional tasting, pairs well with creamy sauce.)
  • 1 can cream of chicken soup (You can substitute with cream of mushroom or cream of celery.)
  • 1 cup chicken broth (Add more if needed for moisture.)
  • 1/2 cup sour cream (Optional, makes it creamier.)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper (Adjust to taste.)

Optional Add-ins

  • 1 cup frozen green beans (Or other vegetables like peas or diced carrots.)

Instructions

Preparation

  1. Spray your slow cooker with nonstick spray or use a liner for easy cleanup.
  2. Add the chicken in an even layer at the bottom. Season with garlic powder, onion powder, and black pepper.
  3. In a bowl, stir together cream of chicken soup, chicken broth, and sour cream (if using). Pour this mixture over the chicken.
  4. Sprinkle the dry stuffing mix evenly over the top. Do not stir.

Cooking

  1. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is cooked through.
  2. Fluff the stuffing gently with a fork. If you want shredded chicken, shred it right in the pot and stir gently.

Notes

Keep the stuffing on top during cooking for better texture. You can make this ahead by mixing the soup and broth the night before and refrigerating. It’s also great for meal prep and can be frozen for later use.
