- 4 pieces Chicken thighs, bone-in or boneless (Skinless is easiest for saucy BBQ.)
- 1 cup BBQ sauce (Your favorite brand or homemade.)
- 1 medium Onion, sliced or diced
- 4 cloves Garlic, minced
- 2 tablespoons Apple cider vinegar (Or a splash of lemon juice for brightness.)
- 1 tablespoon Brown sugar or honey (Optional if your sauce is not sweet.)
- 1 teaspoon Smoked paprika (Optional for that backyard grill feel.)
- 1 teaspoon Salt
- 1 teaspoon Pepper

Preparation
- Layer the flavor. Put onion and garlic in the bottom of the slow cooker.
- Season the chicken with salt, pepper, and a little smoked paprika if using.
- Pour BBQ sauce over the thighs and add a small splash of vinegar.
- Cook on low until the thighs are tender, about 4 hours.
- If the sauce looks thin, remove the chicken, turn the slow cooker to high, and let the sauce bubble.
- Put the chicken back in the sauce and spoon extra on top before serving.
Notes
Do not overdo the liquid to avoid a watery sauce. Keep the lid on during cooking for best results. Thighs are preferred for tenderness. Leftovers can be used in tacos, sandwiches, or salads.
