Main Ingredients

  • 4 pieces Chicken thighs, bone-in or boneless (Skinless is easiest for saucy BBQ.)
  • 1 cup BBQ sauce (Your favorite brand or homemade.)
  • 1 medium Onion, sliced or diced
  • 4 cloves Garlic, minced
  • 2 tablespoons Apple cider vinegar (Or a splash of lemon juice for brightness.)
  • 1 tablespoon Brown sugar or honey (Optional if your sauce is not sweet.)
  • 1 teaspoon Smoked paprika (Optional for that backyard grill feel.)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper


Instructions

Preparation

  1. Layer the flavor. Put onion and garlic in the bottom of the slow cooker.
  2. Season the chicken with salt, pepper, and a little smoked paprika if using.
  3. Pour BBQ sauce over the thighs and add a small splash of vinegar.
  4. Cook on low until the thighs are tender, about 4 hours.
  5. If the sauce looks thin, remove the chicken, turn the slow cooker to high, and let the sauce bubble.
  6. Put the chicken back in the sauce and spoon extra on top before serving.

Notes

Do not overdo the liquid to avoid a watery sauce. Keep the lid on during cooking for best results. Thighs are preferred for tenderness. Leftovers can be used in tacos, sandwiches, or salads.
