Beef and Vegetables
- 1 lb Ground beef, 80 or 85 percent lean
- 2 medium Potatoes (Yukon Gold or russet), diced
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 2 medium Carrots, diced
- 1 cup Frozen peas (or a peas and corn mix)
Broth and Dairy Base
- 4 cups Beef broth
- 2 tablespoons Butter
- 1/4 cup Flour (For thickening)
- 1 cup Milk or half and half
- 1 cup Cheddar cheese, shredded (Shred your own if possible)
Seasonings
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Italian seasoning or thyme
- 1/2 teaspoon Paprika
Instructions
Brown the Beef
- Cook the ground beef over medium heat, breaking it up as it browns.
- Once no longer pink, drain off most of the grease but leave a little for flavor.
- Season the beef with salt, pepper, paprika, and thyme or Italian seasoning.
- Scoop the beef into a bowl and set aside.
Cook Vegetables and Potatoes
- In the same pot, add butter, then diced onion and carrots. Cook until the onion is soft.
- Stir in minced garlic and cook for about 30 seconds.
- Sprinkle flour over the mixture and stir, cooking for 1 minute.
- Slowly whisk in the beef broth, scraping up any browned bits at the bottom.
- Add diced potatoes and cook until very soft.
Combine and Thicken
- Mash some of the potatoes directly in the pot to achieve a creamy texture.
- Stir in milk or half and half and allow to warm through.
Finish the Soup
- Add the cooked ground beef back into the pot, along with the peas.
- Simmer for a few minutes until everything is heated through.
- Lower the heat and stir in shredded cheddar cheese until melted.
- Taste and adjust the seasoning as necessary.
Notes
For a thicker soup, mash more potatoes or simmer uncovered to reduce liquid. If the broth is too thin, let it cook down or add a slurry of flour and water.
