For the Parmesan Mashed Potato Topping
- 2 lbs Potatoes (Yukon Gold and/or Russets) (For best results, combine both types)
- 1/2 cup Butter
- 1/2 cup Warm milk
- 1 cup Grated Parmesan cheese (Adds saltiness and nutty flavor)
- 1 pinch Salt (To taste)
- 1 pinch Pepper (To taste)
- 1 optional Beaten egg yolk (For a richer texture and golden top)
Instructions
Preparation
- Peel and cut the potatoes into even-sized chunks. Begin cooking them in cold salted water.
- In a large skillet, brown the ground beef over medium heat, allowing it to get a nice color.
- Add diced onion and carrots, cooking until softened.
- Stir in minced garlic and tomato paste, cooking for 1 minute to deepen the flavor.
- Pour in beef broth and add Worcestershire sauce, salt, pepper, and thyme, stirring to combine. Allow to simmer until it thickens.
- Once the potatoes are fork-tender, drain them and let them sit for a minute to release steam.
Making the Mashed Potatoes
- Mash the drained potatoes with butter first, then gradually stir in warm milk.
- Add in grated Parmesan and season with salt and pepper.
- If desired, mix in a beaten egg yolk for extra richness.
Assembling and Baking
- Let the beef filling cool slightly to prevent the mashed potatoes from sinking.
- Spread the beef filling evenly in a greased 9×13 baking dish.
- Dollop the mashed potatoes on top, then spread gently with a spoon, creating peaks with a fork.
- Bake at 400°F for 20 to 25 minutes, until bubbly and golden. For extra browning, broil for 1 to 3 minutes at the end.
Notes
This dish can be assembled ahead of time and refrigerated for up to 24 hours before baking. For leftovers, store covered in the fridge for up to 4 days or freeze for up to 2 months. Reheat in the oven at 350°F.
