For the potatoes

  • 3 pounds Yukon Gold potatoes (Best choice for texture and flavor)

Instructions

Preparation

  1. Preheat oven to 375°F (190°C) and grease a baking dish with butter.
  2. Slice potatoes into approximately 1/8 inch thick slices, using a mandoline for even cuts.

Make the Cheese Sauce

  1. In a pot, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute.
  2. Gradually whisk in the milk and cream, then let it simmer until slightly thickened.
  3. Turn off the heat and stir in the shredded cheese, salt, pepper, garlic powder, and onion powder until smooth.

Layering and Baking

  1. Layer half of the potato slices in the buttered baking dish. Pour half of the cheese sauce over the potatoes.
  2. Add the remaining potato slices and pour the rest of the cheese sauce on top.
  3. Cover the dish with foil and bake for 45-55 minutes, until the potatoes are tender.
  4. Remove the foil and continue baking for another 15-20 minutes until the top is golden and bubbly.

Notes

For a creamy texture, allow the dish to rest for 10-15 minutes after baking before serving. To make ahead, assemble and refrigerate for up to 24 hours or partially bake and refrigerate, then finish baking later.
